Zesty Lemon & Cashew Protein Balls
These zesty treats are low in sugar, high in protein & good fats & taste pretty darn good!
Zesty Lemon & Cashew Protein Balls Recipe:
15g Lemon Peel
300g raw cashews
1 cup of shredded coconut
35ml fresh lemon juice
8 drops of Young Living lemon essential oil (or 15ml of extra lemon juice)
1 TBSP of Maple Syrup
2 TBSP of a vanilla pea protein (I used Nutra organics)
Place lemon peel in food processor & process on high speed to finely grate it.
Add remaining ingredients & blend on high speed for 40 seconds – checking at 30 seconds to see if mixture is pliable enough to roll balls out of.
Do not overmix, as the mixture will become too oily to roll balls out of.
Roll balls using a teaspoon as a guide & coat in coconut, drizzled with another drop or two of lemon oil.
Keep in the freezer for up to two weeks & pull out just before serving.
