Nourishing Chicken Bone Broth

Bone broth is one of my favourite health elixirs. It is chockers full of goodness, with Amino acids, minerals and vitamins. Our Western diet is often devoid of proteins like collagen (which is made from Amino acids), as we no longer eat the parts of the animal that contain collagen, such as the feet, bones and hides. Studies suggest that including more collagen in your daily diet, helps to repair your gut, and is useful for regenerating your other connective tissues, such as your hair, skin and nails.

Bone broth

Recipe for Chicken Bone Broth:

Chicken Bone Broth Ingredients (Makes 3L)

2 Organic or Free Range Chicken Frames (I buy mine from Ruby’s Organics)

3L of filtered water
2 TBSP of Apple Cider Vinegar (I use Bragg’s)
1-2 TBSP of Murray River Salt
Generous pinch of Pepper, & a tsp of Dulse seaweed flakes to increase the iodine level as well as the Umami flavours.

Method

Preheat oven to 180 degrees,
Put bones in roasting tray - drizzle with olive oil & season with salt & pepper. Leave to bake for 35-45 minutes until caramelised (this is where most of the flavour starts to develop).
Place in a large stock pot with water,
Add Apple Cider Vinegar, dulse flakes, Salt & Pepper.
Bring to boil & then let simmer for a minimum of 6 hours uncovered. I often leave mine overnight.
Strain bones out of Broth.
Leave to cool on bench & spoon the layer of fat off the top – save this in another jar for cooking.
Store Bone broth in Glass Jars in Fridge/Freezer.
