Raw Salted Coconut Caramel Slice

This slice went out to my newsletter subscribers last week (don't forget to sign up on my home page) & it is a favourite lunch box snack with my boys. I love it because it's so quick to make & it's nut-free (which is a rarity in our house). Enjoy!

Coconut Caramel Slice Recipe

Ingredients

400g Pitted Dates (you can also use medjool dates)
200g Dessicated Organic Coconut
3 TBSP of Tahini
2 drops of Young Living Cinnamon Bark Oil (click here to purchase)
4 drops of Young Living Orange Essential Oil (click here to purchase)
Small pinch of good salt. 

Method
Line a square pyrex dish with baking paper. 
Roughly chop dates. 
Place all ingredients into Food Processor/Thermomix & process on the highest speed until dates & Coconut have broken down.
Place into your Pyrex dish & compact with a silicone spatula & a dessert spoon around the edges (this ensures you get nice clean lines around the edges). 
Top with shredded & dessicated coconut & place in the fridge for 2 hours to set. 
Slice & enjoy. 

This will keep for weeks in the fridge in an air tight container (if you can keep yourself away from it :).
