Buckini's - Gluten free, crunchy Granola

Buckwheat is one of my go-to ingredients. Buckwheat comes from the Rhubarb family & is a seed. It is high in protein & in fibre & when toasted like this, it is delicious. We love this for breakfast, or as a snack with yoghurt & fruit.

Buckini Recipe

Ingredients:

o   2 Tbsp Coconut Oil

o   2 Tbsp Honey

o   1 Tbsp Cinnamon

o   3 Cups of Buckwheat

o   ¼ Cup of Sesame Seeds

o   ¼ Cup of Shredded Coconut

o   ¼ Cup of Sunflower Seeds

o   ¼ Cup of Cashews

o   Pinch of Salt

 

Method:

o   Preheat Oven to 160 Degrees

o   Line 2 large Baking trays with non-stick paper

o   Melt Coconut Oil & combine with honey

o   Add all the dry ingredients to a large bowl & mix through with hands

o   Add the Coconut Oil & honey to the dry ingredients & thoroughly mix until all combined

o   Place Buckini’s onto lined trays – do not heap them on the trays, otherwise they will not bake properly

o   Bake until golden brown (about 15-20 minutes)

o   Allow to cool & then place in an air tight container in the pantry

o   Serve with your favourite milk & yoghurt for breakfast.
