Raw Chocolate Mousse Slice

If you have left over nut milk pulp & don't know what to do with it, look no further!

I often make nut milk in bulk, which means bulk leftover pulp. I never like to waste anything, so I usually add this pulp to my raw balls or my baking. The other day I wanted something a little more decadent - hence this Chocolate Mousse slice was born!

Ingredients:

500g nut milk pulp (excess moisture removed)

4 Heaped TBSP Raw Cacao

150g Raw nuts (I used cashews & almonds)

12 pitted Medjool dates

Pinch of good salt. 

Method:

Place all ingredients in high powered blender & mix on highest speed until all combined & dates have broken down. 

Line a square Pyrex dish with non-stick baking paper & place mixture in there. 

Compact the mixture down as flat as you can & sprinkle with coconut or chopped nuts. 

Place in the Fridge to set for 2 hours.

Slice & store in an air-tight container in the freezer.
