Chocolate & Coconut Chia Pudding

 Healthy treat workshops and cooking demonstrations!  A mid afternoon chocolate fix at work doesn't have to be unhealthy, let me show you how!

I'm sure you have noticed already that I have a HUGE love for Chocolate! Since having my children & being constantly exhausted - Chocolate has become my very good friend!

I am so grateful that I found a healthy alternative to chocolate, Raw Cacao. Raw Cacao is the heavenly powder that comes from cold-pressed raw cocoa beans. Cacao has a very strong chocolate taste - I recommend using a little when you are first starting out, as if your tastebuds are not used to it, it can be over-powering. Research Suggests that eating Raw Cacao has many health benefits, it also raises your energy levels & your seratonin levels (your happy hormones). Healthy chocolate that makes you happy, what's not to love about that?

This Pudding is so easy to make, with only 5 ingredients, you can whip it up in no time. It will keep for up to 5 days in the fridge. My family & I eat it for breakfast or as a treat for morning or afternoon tea. I try not to give it to the kids before bed, as the cacao can stimulate them.

Raw Cacao & Coconut Chia Pudding Recipe:

Ingredients:

2 1/4 Cups of Coconut Milk (Home made is best, but I also love Pureharvest Coconut Milk);

1/2 Cup Chia Seeds (White or Black);

1 1/2-2 TBSP Raw Cacao;

1 Pinch of salt (I use Himalayan Mineral salt);

6 Medjool Dates (If using Pitted Dates use 8-10 & soak for a little while in water beforehand). (You can use 2TBSP of honey/RMS instead if you are mixing by hand);

Method:

Place Dates, 1/4 Cup Coconut Milk & Cacao in Blender/Thermomix;

Blend on high speed (Thermomix Sp 9) for 10 seconds until you see a thick chocolate paste;

Add remaining ingredients & mix on a gentle speed for 15 seconds to combine all ingredients (Thermomix, Speed 4);

Place in a bowl & cover with shredded coconut. Stir this through & place in the fridge for at least 1 hour to set. Serve with your favourite yoghurt, berries or nuts (or all of the above).
